We got our hands on a whole galaxy of high-quality malts: American Ale, Pilsner and Cara Pils. We scored two bags of Mosaic, seventy-five hundred grams of Simcoe and five packs of ultra-high alpha Citra, and a salt shaker half full of Southern Cross. Not that we needed all that for the beer, but once you get locked into a serious hop collection, the tendency is to push it as far as you can.
Hoppy, with a lingering bitterness, notes of grapefruit, pine and caramel, and a resinous finish.
